Here in Arizona, at our apartment community we have what they call a share program, its where farmers that have extra fruits or vegetables share them with others, so I was able to get a large size bag of very fresh green beans. My son and I love green beans, and I did not want any to go to waist, so I decided to freeze them. Its very easy to do,
- snap off both ends of the beans
- use a large pot, fill it with water, bring it to a boil
- I put in about 2 large hand fulls of beans into the boiling water
- set a kitchen timer for 3 Min's. to blanch the beans
- fill a clean sink with cold water and ice, I just put a couple of ice cube trays of ice
- when the timer is up, carefully remove the beans and put them directly in the ice water
- set timer again for another 3 Min's.
- remove beans and put them in freezer safe bags and freeze.
